Since I'm a warm weather transplant to CT, I can't stand the cold weather. I know I've been here for a long time but I still can't get used to the Winter. While many people I know are excited about going snowboarding/skiing in the Winter, I just want to stay inside where it's warm and cozy. Last Winter was terrible, we probably had one snowstorm per week in January and didn't work a full week in that month. Fortunately I was working for a local College and got to have snow days (paid!). Now that I'm back working for Corporate America, no more paid snow days. Today is the first time we had any significant snow fall, I'm so glad it's on a weekend and I don't have to worry about driving to work. Since I have to bring a dessert to my In-Laws tomorrow, I decided to make a Yellow Cake with Chocolate Fudge Frosting. The cake part came out really moist but I thought the frosting could be better. The recipe I used called for unsweetened chocolate but I think next time I'm just going to use semisweet since J like his frosting to be artificial and not as chocolatey.

Happy Birthday to me! The big three O. It really just feels like another day since it's a Monday and I already celebrated it on NYE. We contemplated on going out for dinner but all the extravagant meals we had in the past two weeks made me crave something simple. What's more simple than Fried Rice? Fried Rice is one of those dishes that you can put in whatever your little heart desires. There are also many different styles of it. Pretty much all Asian countries have their own versions, even within different cities, the Fried Rice can be very different.

- Chinese Fried Rice can have soy sauce or no soy sauce.
- Japanese Fried Rice (Omurice オムライス) has ketchup.
- There is also the Thai style pineapple fried rice that has pineapple and curry seasoning.
Since I wanted something a little fancier, I went with the Japanese Omurice. This recipe is based on 2 portions. It's best to use rice from previous day. When you take the rice out of the fridge, don't heat it up since cold rice will cook better and not be mushy. Also I didn't add any salt or soy sauce to the rice mixture since it's got ham and ketchup so it will too salty if you add extra salt.
- 2 1/2 cups cooked short grain white rice.
- 1/2 cup diced ham
- 1/2 cup frozen assorted veggies (carrots, peas, green beans, etc.)
- 2 jumbo eggs-beated with salt and pepper and 1/2 tbs water (use 3 eggs for 3 people if your eggs are smaller)
- 2 tbs chopped shallot
- 1 tbs chopped green onion
- 2 tbs veggie oil or light olive oil
- ketchup (start with 1 tbs, then add more if needed) and more for decoration.
Heat 2 tbs oil in a large pan. Saute diced ham, shallot, green onion and frozen veggies on medium high heat for about two minutes then add the rice. Stir-fry until rice is incorporated with the meat/veggies and is warm through, stir in ketchup. In a heated (medium heat) non stick frying pan, lightly oil the pan and pour half of the egg mixture in it. Swirl the egg around so you make a sheet of egg. Remove the egg sheet and line a small bowl (I use the bowl we use to eat cereal in the morning) with it. Fill the half of the Fried Rice into the bowl that has the eggs sheet and put a plate on top of it then flip it over. Viola, you have an Omurice. Just decorate with squeezable ketchup. There are many ways to cover the rice with the egg sheet so you can always Google it since I'm too lazy to put them here.
